Tasting Notes
For those after an elegant Yarra Valley Chardonnay with notes of crunchy pear, citrus and white flowers with freshness and vibrancy. The palate is layered and textured with a bright fresh finish. Texture also plays a part in knitting together all the elements to give great persistence and length on the palate. Awarded 91/100 by Huon Hooke and ranked #7 out of 36 the Top Australian 2020 Chardonnays.
Process
Hand picked March 2020. The fruit was whole bunch pressed to tank, chilled and settled for 2 days then racked to oak including solids. Wild ferment commenced in oak after 3 days and was completed within 12 days. Approximately one third went through malolactic fermentation. 20% new oak, balance in aged barrels.
